Food & Wine:

Burgundy flaunts some of the best good, plain food in the world: two poached eggs in savory wine sauce, a slab of ham in aspic, a platter of beef stew, a half-dozen earthy snails. This is simplicity raised to Gallic heights, embellished by the poetry of one perfect glass of pinot noir paired with a licensed and diploma'd poulet de Bresse (Bresse chicken), sputtering in unvarnished perfection on your white-china plate. Thus you may find that food and drink entries take up as much space in your travel diary as the sights you see. And that's as it should be in such well-rounded, full-bodied terrain.

The most famous of Burgundy's products and its best ambassador is its wine. Throughout the province, from north to south, are prestigious appellations : Chablis, Coteaux de l'Auxerrois, Côte-de-Nuits, Côte-de-Beaune, Hautes Côtes, Côte Chalonnaise and Mâconnais, not forgetting the vineyards of Pouilly sur Loire and Couchois.

Nougatine was invented almost a century ago by Louis-Jules Bourumeau. This well known sweet was made famous by Empress Eugénie who discovered it during a journey to Nevers by Napoleon III in 1862. On her return to Paris, she placed a large order for the tasty brittle. Today, EDE, the bakery and chocolate factory, and guardian of Monsieur Bourumeau's secret recipe, still maintains the tradition of the authentic Nougatine.

On 01 August 1864, the herd book of the Charolais breed of cattle was created in Nevers; it is known in the Nièvre region as the race Nivernaise. In addition to the large market for purebred Charolais cattle, which produces the greatest amount of meat in the world, cattle breeders, organised since 1921 in the Syndex union, export meat and promote the quality of their breeding stock in more than 68 countries, including China and Thailand.

Burgundy is recognised throughout France and abroad as a leading gastronomic region.
